I want to purchase a birdlocked mini model, but I’m struggling with the ring diameter measurement.

Each time I take it, my result is almost 8 inches. That seems much larger than the options they provide (the recommended size for the mini ring is 5.8 inches). Since my testicles aren’t particularly large, I suspect I might be measuring wrong? It’s unclear how that could happen, but something feels quite off.

"8 inches"? What exactly are you measuring. Wrap a cord around the back of your scrotum and pull it snugly. Mark where the ends meet, then measure that length. The entire purpose of balltrap devices is to keep them from coming out, so they have to be tight.
